At the end of maceration, we "de-vat"; this operation requires 2 people to empty the vat. One of them is inside and has to pitchfork out the compressed grapes. This is a very physical job where heat vies with strong alcohol vapours. Generally, Pierre-Marie is on the inside. Outside the vat, another person pulls the grapes towards the conveyor with a grappling iron.
