When we "de-vat", the grapes are transferred to the pneumatic press to be pressed. The juice is then transferred to another vat for our Beaujolais Blanc or our red Beaujolais les Griottes, a tun (big barrel) for our Beaujolais Cuvée Traditionnelle, our Brouilly and our Fleurie or into casks for our Beaujolais Coeur de Vendanges or our Moulin à Vent. The first pressed juice is called "paradis". It's tasty, slightly sweet, lightly alcoholic and very fruity, in short ‘Paradise', Yum Yum!
